  • 3 cloves garlic, minced
  • 2 stalks celery, sliced
  • 1 cup button mushrooms, quartered
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • ½ cup low-sodium chicken broth + 1-2 teaspoons lemon juice
  • 1 pound baby potatoes, halved
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup frozen peas
  • Fresh parsley, chopped (for garnish)

Instructions

Brown the Chicken:

  • Heat the olive oil in a Dutch oven over medium-high heat. Season the chicken thighs with salt and pepper, then brown them on both sides. Once done, remove the chicken and set aside.
